At Dreidoppel GmbH, there are exciting news from the laboratory of the research and development department. One of the gas chromatographs has been equipped by Chromtech GmbH with a sniffing port for olfactometric analysis. This instrument will support the research and development department to create new flavors on a molecular sensory basis. The gas chromatograph can separate the volatile compounds in a food product. At the end of the column, equal portions of the eluate are directed to both the first detector, a flame ionization detector, for signal acquisition, and to the sniffing port. At the sniffing port, the human nose acts as a detector for odor-active compounds. The human nose is capable of distinguishing countless odors and detecting odor-active compounds at very low concentrations. Modern instruments, such as gas chromatographs with mass spectrometry detectors, are often not sensitive enough to detect these compounds at such low concentrations. Therefore, the combination with olfactometry is an efficient update for the analysis of odor-active compounds. The project is led by Dr. Christine Stübner as part of her work as a Post-Doc in the tandem program "Career paths to a university of applied sciences professorship" at the Hochschule Niederrhein in cooperation with Dreidoppel GmbH. After successful test projects, the system will be seamlessly integrated into the workflows of Dreidoppel's research and development department. ______________ Bei der Dreidoppel GmbH gibt es spannende Neuigkeiten aus dem Labor der Forschungs- und Entwicklungsabteilung. Einer der Gaschromatographen wurde durch die Firma Chromtech GmbH mit einem Sniffing-Port zur olfaktometrischen Analyse ausgestattet. Mit diesem Gerät wird die Forschungs- und Entwicklungsabteilung bei der Kreation neuer Aromen auf molekularsensorischer Ebene unterstützt. Der Gaschromatograph trennt die flüchtigen Verbindungen eines Lebensmittels chromatographisch auf. Am Ende der Trennsäule wird ein Teil des Eluats sowohl zum ersten Detektor, einem Flammenionisationsdetektor, zur Signalaufnahme, als auch zum Sniffing-Port geleitet. Am Sniffing-Port fungiert die menschliche Nase als Detektor und registriert die geruchsaktiven Verbindungen. Die menschliche Nase ist in der Lage, unzählige Gerüche zu unterscheiden und geruchsaktive Verbindungen in sehr geringen Konzentrationen wahrzunehmen. Moderne Geräte, wie z.B. Gaschromatographen mit Massenspektrometrie-Detektoren sind oft nicht empfindlich genug, um diese Verbindungen in so geringen Konzentrationen nachzuweisen. Daher ist die Kombination mit der Olfaktometrie ein effizienter Schritt zur Analyse geruchsaktiver Verbindungen.
